Sweet Paprika Chicken with Chickpea Salad

Ingredients

1 medium chicken breast

1 tsp ground tumeric

1 tsp sweet paprika

1 tsp finely grated lemon rind

1 clove garlic, crushed

1/2 tbsp olive oil

Chickpea salad

1 tomato, diced

1/2 cup canned chickpeas, drained and rinsed

1 tbsp flat leaf parsley, chopped

1 tbsp lemon juice

1 tbsp olive oil

Method
  1. Combine chicken breast, turmeric, paprika, lemon rind, garlic and olive oil; stand for 10 min.
     
  2. Cook chicken in heated, oiled, non-stick frying pan until browned and cooked through.
     
  3. Meanwhile, combine chopped tomato, chickpeas, parsley, lemon juice and olive oil in a small bowl.
     
  4. Serve chicken with chickpea salad.
