Step 1 Rinse the chickpeas in cold water and tip into the food processor. Add the tahini, crushed garlic, lemon juice and 3 tablespoons of the reserved liquid from the can. Turn on the food processor and slowly pour in the oil while it runs.
Step 2 When the mixture is fully combined and smooth, tip it into a serving dish. Drizzle with some more olive oil and sprinkle with paprika and finely chopped parsley leaves.
Enjoy with a variety of fresh chopped vegetables – carrot, cucumber, capsicum and celery sticks are perfect dippers!
