Garlic Chicken Stir-fry with Broccoli

Ingredients

700 g chicken breast fillets, sliced thinly

75 g plain flour

2 tbsp peanut oil

6 cloves garlic, crushed

1 medium red capsicum, sliced thinly

6 green onions, sliced thinly

125 mL reduced salt chicken stock

2 tbsp light soy sauce

500 g broccoli chopped coarsley

Method
  1. Coat chicken in flour; shake off excess.
     
  2. Heat oil in wok or large frying pan; sir-fry chicken, in batches, until browned all over and cooked through.
     
  3. Add garlic and broccoli to wok; stir-fry 2-3 minutes.
     
  4. Add capsicum and onion to wok; stir-fry until capsicum is tender.
     
  5. Return chicken to wok with stock and sauce; stir-fry until sauce boils and thickens slightly.
